I’m not the one to grab a frozen pizza if it is just me for dinner even though I have an unused Totino’s Pizza Oven I found at the second-hand place.
Tonight’s menu: beef tenderloin medallions, sweet potato fries, bibb lettuce salad.
Longest prep item, the sweet potato fries. First, put the sweet potato it in the fry cutter – I’m sure you have one of those at home. FYI, any of those tabletop ones will NOT be able to do sweet potatoes. Handy tip – if you are doing russets, cut them and soak them for 20 minutes to get the starch out.
Drop them into a bowl with a couple of tablespoons of olive oil and a bunch of blackening seasoning:
Toss them up:
Pop them in the spray greased air fryer for 10 minutes at 360 degrees:
Toss them, then another 10 minutes at 360 degrees:
Serve with your tenderloin and salad, and a couple of dipping sauces.
